I do not store your information but know that any webserver logically sees incoming IP addresses and therefore there's an automatic log of any visit. A proxy or VPN will work if you want to mitigate that.
If I need to remember something that you set, for example a language preference, I will use "en"/"fr" cookie or something called localstorage. I cannot see what you choose, so in this case I wouldn't know if you decided to view the page in French or English.
Likewise the contact form is minimal, doesn't require captchas, and lets you submit without a name or real email.
